Kaajaalu(Carrot biscuits)

Ingredients::
Maida( all purpose flour):: 3 cups
Sugar:: 1 cup
Coconut ::1 cup( grated)
Carrot:: 1 cup grated
Salt ::1/2 teaspoon
Cardamom::1/2 teaspoon
Butter::1 cube (room temperature )
Oil::3 cups
Procedure::
Measure three cups of maida in a big bowl so it's convenient to mix all the ingredients and knead the dough.Now add sugar, coconut , carrot, cardamom powder and salt and mix well. Now add the butter and knead the dough. Add water as needed so the dough is the consistency of pie crust . Now roll the dough into 1 inch thick circle and cut into circles or squares .Poke few holes into the cut kaajas so they cook evenly.Once you are done with all the dough , heat oil in deep frying pan and start putting the kaaja (cut pieces )and fry until golden brown. To check the oil temperature drop a small ball of dough in the oil and it should rise to the top in few seconds Do not fry on high heat.Remove the fried Kaaja on paper towel to remove the excess oil and store in airtight container once cooled.
Stays good for two weeks at room temperature.Good snack for kids during summer.
