Gutti Vankaya kura(Stuffed Brinjal curry)

Ingredients::

Brinjal::1/2 kg

Urad daal::2 tablespoons

Chana daal::2 tablespoons

Red chillies::5

Coriander seeds ::2 tablespoons

Turmeric::1/2 teaspoon

Salt ::1 teaspoon

Coriander leaves::1/2 cup

Oil ::2 tablespoons

Procedure::

Wash the brinjal and slit in the middle and put in salt water.In a pan dry roast urad daal , Chana daal,coriander seeds,red chillies until golden brown.Let it cool and grind into coarse powder.Now add 1 teaspoon of oil and salt to this powder , mix well and stuff in the brinjal.Keep the extra powder aside .Now in a pan add oil and let it heat for few seconds. Now put the stuffed brinjal and cook with lid untill brinjal is tender stirring occasionally gently. Once brinjal is tender add the remaining powder and coriander leaves .Remove in serving dish and enjoy.

Good with roti or rice. Stays good outside for two days and lasts in fridge for four days.

The powder can be made and stored in fridge for a month.Can be used in any vegetable curry.
