Merapakaya kura(stuffed chillie curry)

Ingredients::

Green chillies( big )::10

Onion(big) :: 1( cut into fine pieces)

Potato(big):: 1

Tomatoes::2

Turmeric::1/2 teaspoon

Mustard seeds::1 /2teaspoon

Urad daal ::1 teaspoon

Cumin seeds::1/2 teaspoon

Oil::2 tablespoons

Salt to taste

Procedure::

Wash the chillies and slit them and remove seeds.Boil the potato and mash it with little salt and keep it aside.Also purée the tomatoes raw.In a pan add a teaspoon of oil and fry the chillies for a minute.Now remove the chillies and let them cool and stuff the chillies with the mashed potato. Now add one teaspoon of oil and add urad daal , mustard seeds, cumin seeds . Let the mustard seeds splatter then add onions and salt , turmeric and fry until tender.Now add the Tomatoe purée and add a cup of water and let it cook for few minutes with the lid .Now add the stuffed chiies and cook with lid stirring carefully. The curry is done when the it comes together .

Good with roti and fried rice. Stays good outside for a day.
