Beerakaya kura(Indian squash Curry)

Ingredients:::

Beerakaya(Turia):::1kg

Coriander 1/2 cup

Coconutshredded1/2 cup

For seasoning::

1/2 tablespoon cumin seeds

1/2 tablespoon Chana dal

1/2 tablespoon urad dal

1/2 tablespoon mustard seeds

2 red chillies

2green chillies

Curry leaves cut 1 teaspoon

Oil 2 teaspoons

Procedure::

Peel the beerakaya and cut into 1/2 inch pieces.Make a coarse paste of coconut, green chillies, cumin seeds , coriander,salt to taste.Now heat 2 tablespoons of oil in a frying pan and make the seasoning by adding Chana dal , urad dal, mustard seeds,red chillies, curry leaves. After mustard seed splatter add the beerakaya ad the paste and mix well. Put the lid and stir after 5 minutes. If there is lot of water then cook for few more minutes without lid.once the curry is together without any water switch off the gas and and move into serving dish .

It can be served with rotis or rice. Can stay in fridge for two days
